Episode 18 - Cold Beet Borscht
This dish is rated Milchig and can be eaten with dairy meals only.

Supplies

  • 4 quart saucepan
  • grater
  • can opener
  • mixing spoon

Ingredients

  • 1 15 oz can whole beets
  • 1/2 cans water
  • 3 - 4 tsp. fresh lemon juice
  • Sour cream (optional)

Seasoning Ingredients

  • 1 tsp. salt
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/4 - 1/3 cup sugar

Procedure

  1. Drain beets and add liquid to saucepan.
  2. Add water and bring to a boil.
  3. Grate beets.
  4. Add beets, seasonings, and lemon juice to the saucepan.
  5. Boil for 20 minutes.
  6. cool and then refrigerate.
  7. Serve cold.

NOTE: Whip in sour cream if desired or serve with a dollop of sour cream, boiled potato, or diced cucumber.

To make recipe sweeter, adjust sugar to taste.
